I like wheat beers so I would be tempted to do that. I also don't know why no one does a pumpkin pils. I think you would get maximum pumpkin taste in the beer.

It's never too late to secondary. I have thought about making this beer. But I would use apricot extract and add before bottling. That way I could bottle the non-apricot beers first and then add extract to taste and bottle the rest.
I sanitize in my dishwasher before bottling so that is fine. I would be concerned that the Star San foam may fill up your kitchen. Try it and post pictures. HAHA.
I am fermenting with WLP300 and racked onto an existing yeast cake. I had some concerns but no blow off. This is 2 brews in a row with that yeast and have had very controlled fermentation. Who knows.
