    Here is a quick mock up of my new brewery name and Logo. My gf did it in like 5 mins. I haven't decided how I'm going to work it on to a label yet, but I like that it is simple, and clever if I may say so myself.

    They're basically the same thing. Whirlfloc is just processed and pressed into tablet form so it's easy to use and measure. For 5.5 gallon batches, I use 1/2 tab of Whirlfloc with 15 minutes to go in the boil. I can tell a difference in my beers with and without it. My beers clear much faster...

    Yes I did. I'll have to look at my notes, but I think I mashed around 154-155 for an hour. Dunk sparged at 170 for 10 mins. The 2-row is in there just to make sure I got full conversion.

    I'm posting to myself here, but I'm using this as a journal now, lol. Bottled this up today, got 54 bottles. I think this is going to be a winner. I can't really taste the honey malt now, but I'm betting it will come through after bottle aging for 2-3 weeks.

    Ok so would I drop the Victory then? I could mash up to 3lb of MO with the rest of the specialty grains. Or would it need to be like 2.5lb MO and .5lb victory to make up for the DME.

    I think that link is broken, but I know which one you're talking about. I would have to make a few small changes, but I think it will still be good. I guess that's one of the points of homebrewing: I can't find what I'm looking for, so I'll just make my own damn beer. :ban:
