    Well, if the baking soda is adding nothing to the flavor of the beer I guess I can just remove it. I'm not sure why Beersmith was trying to add it in. This is the water profile and mash pH with and without the baking soda. With Baking Soda: Without Baking Soda:

    That's a great question and I guess i'm not sure why i'm adding it. Beersmith said to add it so I was planning on adding it, thought it may have something to do with matching the water profile for "Black full" in Beersmith and not necessarily related to pH. I'm not following another recipes...

    New to water adjustments

    Yeah, I'm not sure either. It sounds like as long as I can bump up the PH a bit they may be OK but I'm also new to water adjustments. I only got around to making the pale ale last weekend so the stout still remains in question. Hopefully will get to it this weekend but may get bumped to next.

    Because of all of those variables I was looking for a better and more accurate way than eyeballing. That’s why I was hoping that there was a set amount for % of gravity increase per gallon boiled or something that way a formula could be created. Guess I have to do it the hard way. Thanks guys!
