The op mentioned finishing the mash and then letting it sit overnight before boiling and adding hops. This was something I was thinking about because I can't seem to find more then 3 hours at a time to brew. It sounds like most comments are saying to mash overnight and finish in the morning...
thank you all for the help. I took another reading and still got 1.013. Had a friend of mine taste it and found it was just very very mapley. It wasn't the sweetness. Would adding some hop tea help calm down the maple or will it subdue over time?

That sounds like a good precaution in the future. Maybe I will split the batch now and add some hop tea. Should I use more Chinook or cascade? I would hate to make it too hoppy

I recently made a vanilla porter with 4 beans that I chopped and let sit in rum for 4 days prior to adding to second ferment. I dump the beans and rum. I think the vanilla should have sat for more time because the flavor was hardly noticeable.
So I was using 2 pots mainly because I thought the more water I boiled with extract and grains the more flavorful the beer would be overall. Is this not these case?

New to brewing I have been using multiple pots to get close to a 4g boil. And then add the other gallon to help chill. Is adding the extract late going to give better flavor then using 2 pots?
