    Scotch Ale Woes

It seems nothing can go right with this brew. http://www.northernbrewer.com/documentation/beerkits/HopeandKing_Pro_TH.pdf I was supposed to have an OG of 1.060, but I only hot 1.050. I'm not totally sure what the problem was, but I suspect either my thermometer was giving me an off...

How to add rum soaked oak?

Wow, sounds great, buddman! Mine is more of an afterthought (definitely not a clone), but I hope it comes out tasting at least a little like the innis and gunn. Oh yeah, very expensive! Cheers!

How to add rum soaked oak?

Okay, so rack right onto the rum and oak, then remove the hopsock and continue to age. How do you get the hopsock out of a carboy when you're leaving the beer in? Thanks again!

How to add rum soaked oak?

So, just to update here's the plan: I ordered 2oz of medium toast american oak from Northern brewer. I added 4 oz of 12 year aged appleton's rum. I'm gonna just let that soak until I need it, which is gonna be something like 6 weeks. I'm racking my Scotch Ale to secondary after 2 weeks in...

Adding fruit to an American Wheat?

Yeah, I may actually go with just cherries, and if not, then definitely cherries and blueberries. Thanks for all the tips! :mug:

Adding fruit to an American Wheat?

Awesome, thanks, all! I'll definitely freeze them, and maybe do a little star san or something too? Cherries sound good. Maybe I'll do that instead of the strawberries. Hmmm, I guess maybe I should only 3/4 of a gallon in the gallon jugs then, to prevent too much blow off. Nordeast...

Adding fruit to an American Wheat?

Hey gang, I recently purchased Northern Brewer's American Wheat AG kit: http://www.northernbrewer.com/documentation/allgrain/AG-AmericanWheat.pdf I was thinking about racking off two gallons to add fruit to in secondary, but I was worried the higher hop character of an American Wheat...

How to add rum soaked oak?

Yeah, I've heard both extremes (very little rum to a lot), but I'm probably going to go on the light side. There were a ton of specialty grains in the beer that I do want to come through. On the other hand, I would like to kick the ABV up a bit because I didn't hit my target OG... But I read...

How to add rum soaked oak?

Thanks for the reply! I did start listening to that recording last night, but didn't have time to get through the whole thing. I might end up just pulling a gallon or two to do a "test age" too, just to be safe.

How to add rum soaked oak?

Hey all. I'm planning to brew Northern Brewers Hope and King Scotch Ale tomorrow: http://www.northernbrewer.com/documentation/allgrain/AG-HopeandKing_Pro_TH.pdf Coincidentally, my girlfriend bought a case of her favorite beer, which is Innis and Gunn Rum cask aged scotch ale. We were...

    Good substitute for "cheesecloth"?

I also use the paint strainer bags. I get them from home depot for like 3 bucks I think, and you get two 5 gallon ones in a pack. (Also have the 1 gallon size as mentioned above). I used mine a number of times, for over a year, before having to buy new ones. Of course, it was because I lost...
