How long for Nottingham to clear?

I used 1118 in one batch and Notty in another. After 5 weeks the 1118 is still hazy, the Notty batch (4 weeks) is clear. As mentioned, the 1118 is more wine tasting, the Notty is more like what I think Cider tastes like. (The 1118 reminds me more of Apfelwein than Cider, but not quite right...

    Crab apples!!

My crab died off at the scion a few years ago, and the root stock started shooting out. I let it grow to see what I would get. Got a fair amount of fruit this year, seems to be a Winter Banana flavor. Nice apple. Next when, when I have my crusher and press, looking forward to adding it to...

    Salal cider

Never thought of using the salal for cider. I have acres and acres of it here. The berries are great if you pick them at the right day/hour/minute of ripeness, kind of like a pear... Will have to go see how many I can get next summer.

How are your trees doing this year?

This was a strange fruit year for me. The apples did ok, but I got NO pears (well, one tree had three or four, the other maybe the same). No plums, and the cherry tree might as well have been a flowering cherry. It was a cross between a cold snap when the trees were in blossom and the thunder...

    Is Apfelwein and Cider different?

The last time I had apfelwein, I had been playing guitar on the streets in Sachsenhausen. We had been playing all day (Hauptwache, several other places) and were dry and parched. We bought some litre bottles of apfelwein from a guy on the street and lay down on the grass to sleep near the...

    cooked up a stout today

Camonick, I use distilled water (can't use my well water, too much iron) so I add some bicarbonate...I keg, and have tried using beer gas (nitrogen mix) but am having difficulty balancing the gas - seems to be over carbonated. When I use CO2 and a picnic tap, seems to be fine....(just me...

    cooked up a stout today

I was going to go slow on my use of the acid malt....figured I would move up by 2 ounces every time I brew and see how it goes. (I can drink more than 5 gals of stout a month with no problems....)

Thoughts or feedback on this stil...

On the HomeDistiller forum, this type of still doesn't get good reviews. There are multiple issues with some of them, requiring tinkering around to get them to work.... https://homedistiller.org/forum/

How much extra would you pay to support a LHBS

it is 30 miles to the nearest LHBS going south, and 45 miles going north. I would love to shop at either location, but the cost of gas in a F250 just makes it cost prohibitive a lot of times. I have to co-ordinate my trips to the LHBS with other trips in those areas....so I shop on line a lot...

    What are you drinking now?

As horrid as this sounds, I have no beer... I had surgery in July and couldn't lift anything over 15 pounds, so I couldn't brew anything for the last month.....ack! Going to be a long few weeks while I wait for things to ferment and get ready.... brew day tomorrow, after I build a new chicken...

Do higher mashing temps override lower mashing temps?

Was? Wiederholen sie, bitte? Das ist nicht richtig!
