    Inspired by your post, I tried cider lees for bread. First batch didn't rise at all. Second batch I added yeast and it rose only somewhat. I baked it anyway. Dense but very tasty. The lees add a deep and satisfying flavor. (We've also used lees for salad dressing and braising "country-style"...
