    Does a gentle boil equal DMS?

    I do the stovetop as well and was getting too much DMS with lighter beers (it's not restricted to just Pilsner malt). I just go with a longer boil - 90 minutes and that seems to have stopped the problem. Can't stand brewing outside - too hot or too cold...no TV :)

    I made the switch to all grain recently and went into it figuring that my first 3 batches were going to be cr*p - I'm not going to worry about how they turn out, I'm going to figure out my system, how to brew all grain, etc. Now I'm really ready to brew!

    I switched to all grain a few batches ago and was getting bummed about a 50-60% efficiency as well - until I posted here and someone pointed out that my low numbers were brewhouse efficiency, not efficiency into boiler. When people talk about efficiency, they are talking about into the boiler...
