    Sugar Plum Spice Mead

Just got this one into a secondary the other day. It still looks really red in the carboy, but when its just in a glass it has a gold-ish brown color. Smells great. The alcohol still tastes too hot, but when that mellows out, it'll be worth the wait. It kept a really sweet taste, still seems to...

    Wormwood herb beer

So time is definitely helping. I just got it out of the carboy and into some bottles. Its been the better part of a year but the taste is really improving. I still wouldn't call it good yet, but its much better. I only saved a dozen of them, I figure I'll let them sit in the back of the closet...

    Sugar Plum Spice Mead

Its coming along good, just about done ferminting. Still get a bubble through the airlock every 10 or 12 seconds. It'll be at least a couple months til it clear, but the color has faded some. Smells really good coming through the airlock. Ill keep this updated when it moves from the primary.

    Wormwood herb beer

I know I'm a couple months late but thanks for giving me hope guys. I've got a wormwood braggot (completely by mistake) going in my primary right now. The recipe I had recommended bottling it pretty quick; fortunately I tasted it first, unfortunately I kinda wanted to die when I did. I was...

    Agave, yield and color %'s?

Sorry I misunderstood you original question. We have a couple bottles of agave at work (nectave is the brand if it makes any difference) with a proper nutrition label. It lists the ingredients as agave nectar and nothing else. It estimates 16g in each tablespoon of nectar. Honey is about 17g per...

    Sugar Plum Spice Mead

So right after Christmas I'm walking through the grocery store and they've got all the holiday tea marked down. All my carboys were full but I grabbed a box of sugar plum spice for when I had an empty one to play with. Just brewed it up today. I went with just about the most simple...

    Agave, yield and color %'s?

I'm not sure if its the Agave nectar that you're talking about, but the agave plant is used to make tequila and mezcal. Those are both distilled, what we call beer or wine made from agave is called "pulque". I looked it up in "Sacred Healing and Herbal Beers", it talks about it quite a bit, but...

    Clarifying Mead

Thanks guys, lots of good information, don't worry I'm taking notes. I'll definitely remember to rack it every month after fermentation, that was the biggest issue I ran into with bottling was stirring up what had settled and it sounds like that an easy fix!

    Clarifying Mead

I think everyone has been more than aware of the fact that stupid is the word you wanted to use since the first post; if you want my opinion, stupid would be replying with three separate posts telling me how awful my mead is going to be without answering my original question. Which...

    Clarifying Mead

thank you nitack, I've been trying to think of a polite way to say "thanks for being a know it all while not answering my question" all morning. You summed it up best. This is my first batch, I know its not going to be the greatest mead ever made, I know there were some things I probably could...

    Clarifying Mead

I just bottled my first mead; made it back in November, so it had about 5 months in the primary. It was still kind of cloudy, but not terribly, smelled great, still tasted a little hot but I'm not planning on drinking it for at least another three to four months anyway. What is the benefit to...

    Winchester Ale

So my wonderful wife got me "Sacred herbal and Healing Beers", really neat book. Within a week I had sticky notes coming out of it at all angles. I had fully intended to burn through as many recipes as fast as I could, but as usual got distracted. I have made two in about as many months, and...

    Blueberry wheat beer

thanks for the advice, added 4# to the secondary and let it sit for two weeks before bottling. it came out great, almost has a wine quality and lots of reddish/purple color. the fruit added some sugar which everyone seems to agree translated well into extra alcohol and not overly sweet beer...
