    @Beerwildered great setup man! Curious as Im in NC as well - how well do the fermenter/glycol setup handle the NC summers in the garage? No issues with cold crashing? I personally use fermonsters in mini fridges in my NC garage, but those look awesome man!

    Mosaic, I7, Amarillo. Its nice flavor but aroma could be better.

    Off flavor - whats the cause?

    Curious, what were the actual gravity readings at 7 and 9 days? Was it stable and you were sure it was truly done? with those stats it seems you are at ~79% attenuation so thats a little higher than the expected values on WY1056. Never used that yeast myself. Other things: how are you doing...

    Made a Dubbel with 3787 and love it. Didn't go crazy high with my ferm temps to help keep the beast in check but still great belgian character in the end.

    @R.A.I.D also curious how long you keep it at the 23C pitch temps prior to dropping to 18C? Reason why I ask is that 1) Ive seen peeps do this before with other yeasts and have always just assumed that people were wanting the get those esters early and often and 2) 23C is higher than fermentis...

    Dry Hopping Cold

    Ive settled in nicely with soft crashing to 50 and holding for 36hrs to drop yeast out then bouncing it back up to 58-60 for the DH. Been working very well for me in terms of aroma and flavor with zero hop burn.
