I wouldn't be surprised if half of them use juice from concentrate or at least not freshly pressed. Do you know of any names? I've been in Florida for years and have been looking for local cider but never seen any, the microbeer community is flourishing though with some amazing stuff.

I have only used Cotes Des Blancs so far (been making cider a few months) and it always finishes up for me in ~7 days and that's including batches I made with almost 8% ABV - I do live in the south and it's ~77F in my fermenting room though.
I know it slows down at lower temps.
You can get ten 5 gram packs of Cotes Des Blancs yeast on Amazon for $7 and that's enough to make 50 gallons. It'll last you awhile and it tastes good, works well in the southern heat and ferments out in about 7 days.
I would try to mount/hang the vacuum sealer so it hangs with hinge part facing up (and the lid facing you) and then put the cider inside a bag but leave at least 25% empty space at the top and have someone else help you hold/seal it but you'd likely have to be very careful not to get the bag wet...

I'm in USA but I have to say Aldi's apple juice from concentrate is amazing for cider and it's all that I use - they also had a "from concentrate" Cranberry Cherry flavored juice which is mostly apple with some other juices including cranberry and cherry added - I used 25% that in my last batch...
