    Campden into the must, 30 hours or so before pitching the yeast. Final gravity is dry... between 1.000 and 1.002... It doesn't taste like honey... It smells like the rest of the meads I've made. It just kinda tastes sour.. like a sour patch kid without the bite and without the sweetness...

    Right! I wasn't exactly in the right state of mind when I said that. It's at 16 now. And it's starting to clear up, so I think the yeast is either dead or out of food. I guess a good rule of thumb is to just wait until it's cleared and settled, rack, then repitch before bottling...
