    drying hopping my first time

If you like that style then it is a perfect first brew. It shouldn't allow any oxygen into the wort because there is already a blanket of CO2 covering it. Hops really aren't able to contaminate anything because bacteria can't live on them so no worries there. I personally just dump my pellets in...

    High Gravity Chocolate Stout

When I say add the hops at 60 minutes that is the start of the boil. 20 minutes would be 20 minutes left and 15 is 15 minutes left.

    High Gravity Chocolate Stout

1 and 2 are correct and from there you are close. 3 Add 5 lbs DME and bring back to a boil. 4 Add 2 oz of Goldings hops at 60 min. 5 At 20 minutes add the rest of the DME. 6 At 15 minutes add 5 oz baker's chocolate. I think I would revise the steeping grains to add in a .5 lb of roasted...

    High Gravity Chocolate Stout

Why not start making your own kits to what you like? I could never find exactly what I liked either so I started creating my own recipes from little parts of other brews. I'll take a guess at one and then you can change it from there if you'd like. 10 lbs Light DME .5 lb black patent .5 lb...

    Barleywine question

I was thinking the same thing. On a brew that you want to let age for a very long time you don't want to be cracking one open every month to see how the carbonation is doing. I've also heard that if you tap on a bottle it will sound different when it is carbed and when it isn't.

    Help constructing recipe

If this comes out too light you can always add some vienna or crystal 20 to steep. The one beer that I didn't steep anything I was a little disappointed in.

    Smaller batches?

Thanks, I really appreciate all the help. I figure I'll be jumping into this part of the hobby in about a week when I need to head up to the homebrew store for more beer supplies.

    Smaller batches?

I'm interested in making soda but I also don't need four gallons of it at a time. Would I be able to scale it down to a gallon? Does the extract stay good after opening? I'm also a big fan of variety so I'd like to have a couple bottles of different things in the house and at four gallons at a...

    Twilight II (moon something)

So I got stuck watching this too (she watches my movies, I should at least try to watch hers) but instead of just sitting quietly I made fun of it for a while and then started on the whiskey. All in all the movie was probably much more entertaining than it was if I was sober and then I had the...

Aging A Tripel - Secondary vs Bottling?

Mostly just personal preference but if you have a lot of trub from transfering too soon than it might be a good idea to do another change. The less transfers that you have to do though, the better. My personal preference is usually just a primary and no secondary. So far I've only used it on...

Aging A Tripel - Secondary vs Bottling?

How much trub is on the bottom?

Aging A Tripel - Secondary vs Bottling?

Bulk aging works a little faster and it also keeps consistency up at a higher level.

Why keep steeping grains off the bottom

Nah, two pounds isn't much at all. I've done up to five pounds in one sock. Also, there are more worries if you are using an electric stove because the burner stays hot for so long. Most grains that I've used float for at least the first part though so not many worries.

    Mouthfeel and Body

Is that a 5 or 10 gallon batch? Looks like a lot of 2-row but I would think the 120 would give you something.

Huge "brewery" disaster, need some advice

And his name to brown sunshine. Good luck getting it all cleaned up and replaced.
