Yeah may do that thanks would eisening ?? Donno if Thats right freezing the beer slowly and pulling out some ice slowly would that work? If so when would I so that at what stage of fermentation?

Chiller fitting broke an added water to beer . At 1.048 supposed to be 58 can I boil up some dme and add to fermentor and if so how much???

Thanks for the input all. Yeah I went with the irish and Vienna, I just try to avoid some of the malts like Vienna if i'm not ordering it online cause our Lhbs charges like 8 bucks a lb. Crazy. I may add another oz of hops at 5 min as you do as well. Thanks again for the suggestions.
