You can freeze grapes as well, make more batches as your equipment frees up.

Plastic is fine as long as it is PET plastic, such as used for better bottles. Regular plastic does leach chemicals.

You use the whole pack, it does not matter if you make 1 gallon or 10, one packet does the trick ;)
