    Back sweetening country wines

Thanks for the advice. The two pure Raspberry wines will get juiced. The blueberry strawberry cherry is perfect as is. Actually beyond perfect for such a young wine

    Back sweetening country wines

I have 3 separate gallon wines going as of now. 1.Blueberry strawberry Nanking Bush cherry, 2. Golden Raspberry 3. Red Raspberry /Blackberry. #1 tasted great at racking. #2 SOUR. Not off but sour. #3 yet to be determined. What's the best way to back sweeten after a month with potassium sorbate...

Adding Cascade leaf hops to Nut brown Ale kit

The kit has 1/4 oz of Fuggle at start. I was thinking another . 15oz at 30min, .10 at 5min. The lupulin look and smell great. Where you saying the whole leaf suck up to much wort? Thanks

My next mead will be a different animal. I picked up 10 lbs of super dark honey from an Apiarist in the mountains of...

    First Mead

I racked this mead to secondary with SG 1.007 ABV 10.13. Taste test was phenomenal. Definitely will improve with aging. To me and my FIL, it had 2 separate layers. One alcohol, one sweet grape like wine. I would imagine that it will blend and mellow with time. I held off on any additional fruit...

    First Mead

This is my first mead, 4 extract beer brews completed. I used 3 1/4 lbs. of mixed honeys, 1 Orange blossom, 1 wildflower, 1 clover, 1/4 of a local, for a 1 gallon batch. Wyeast 4184, one packet of Fermaid, OG was 10.80? Sound close? My eyes aren't what they used to be. Looked like it would...
