    As long as you want, assuming the head space is virtually non existent. Also make sure to keep your airlock full or even a solid stopper to prevent air getting in.

    I've found that home made wine and some dish soap works the best for fruit fly traps. I don't even make a special trap, just a short glass. Way more effective than vinegar.

    Maturing time..

    At least 2 weeks after kegging. I usually have 2 on tap at once and brew 10 gallon batches so it's easier to taste the maturation process.

    Yep, set regulator to serving pressure and leave it alone. One of my regulators stays at 12 psi. The other changes slightly depending on beer style.

    Carbonation choices

    Fyi, when using bottled co2 its all forced carbonation, just a matter of how fast you force it. I recommend set and forget. Beer needs cold conditioning time anyways. My beers like 2 weeks, so why worry about carbonating quicker?

    This is kind of off topic, tractor trailers use the same type of fittings for air hose connections and they always leak. I was always afraid of converting for this reason. I will keep my stainless ffl fittings.
