if this helps at all, it is an all pils saison fermented with white labs belgian saison yeast...
i racked from underneath the bubbles, and the bubbles started forming after a few days.
it is hard to tell from the taste... this is my first time...
i am planning on doing a 5 gal unfiltered batch tonight.
the main reason i am even doing an apelwein is because i want the 1 gallon glass containers for small test batches.
cool, thanks for the tips... i have heard to steer clear of purees though because it will turn into a gooey mess in the carboy... have you heard of this?

typically, i dont like IPA's aged (like most hopheads) and without knowing anything about your beer, i think it might be safe to say that this beer will be most enjoyable withing 2 months of bottling...
