    WLP677 for Kettle Souring

Thanks, RPh. I went the Goodbelly route. Kettle soured for 3 days to a PH of 3.4. Took a taste today after a gravity reading, and I'm loving the flavor.

    WLP677 for Kettle Souring

I planned on making a kettle soured raspberry Berliner Weisse this weekend. The original thought was mash on Saturday and sour until the PH reached about 3.5 and then continue the boil. However, not doing my due diligence, I ordered WLP677 which has been known to contain yeast (maybe), thus...

    FastFerment Upright Fermenter

FYI... in the top picture the circumference of the front of the fridge was sealed and insulated before testing.

    FastFerment Upright Fermenter

Originally, I thought about doing a whole build thread outlining my trials to make a fermenter for my FastFerment conical. After seeing the onslaught of posts already existing, and being eager to work and not snap pictures, I decided against it. But, after doing the work and having a nearly...

New to Kegging, Need some real world experience

I may have found a place locally that will just swap out the tank as-is, and if they would I think that would be my best approach. Re-certified and filled. I've read that there is no such thing as CO2 going bad, simply put without a LOT of persuasion it's pretty hard to change the makeup of...

New to Kegging, Need some real world experience

Hi Folks, Finally have all the parts necessary to start kegging and have a few questions to ask before I take the initial plunge. Basic rundown: I found an old Spartansburg keg and a 15# or 20# co2 tank in the basement at work that was destined for the dumpster. I have already cleaned...

Lets talk SMESH for a minute.

In the single malt single hop realm, I've really enjoyed NB's Smash American Session Ale. It's composed of 6lbs of Pils LME and 3 oz. of Simcoe Hops. Really enjoyable, real easy to drink, haven't had a complaint yet, this is my second time brewing it.

What is your favorite IPA extract you've made so far. ..

Not necessarily a full on IPA, but NB's Smash Ale is good, and I really like their Dead Ringer kit too. In fact, this is my second time brewing the Smash. Single Malt, Single Hop, super easy.

    N. Brewer's John Q. Adams kit

Thanks for the info. Just cracked one of the Marblehead Lagers three weeks after bottling. The off sweetness I had described is gone and I'm happy with the brew. I think after I brew my Smash, I'm ready to start a few more involved techniques, such as harvesting/washing yeast and following...

    N. Brewer's John Q. Adams kit

Sounds like you have a great stash building up, nearing completion. I used Saflager S-23 dry yeast, as recommended on the order page. I haven't tried liquid yeast yet and certainly haven't traveled down the yeast starter path either. After my SMASH Ale is brewed, I think my next kit will...

    N. Brewer's John Q. Adams kit

So I finally had a few. After two weeks in the bottle, I notice a sweetness that I'm not quite fond of. It's not an off flavor sweetness, and it falls off after a sip of two. I suspect that it will round out in another week or so. Not disappointed, just different than I expected.

Bottled the Marblehead this weekend. Tastes good. Nice and smooth, if a bit sweet. I expect that'll even out a touch in the bottles. Will keep you updated.

    N. Brewer's John Q. Adams kit

Yup, racked to secondary on the 26th. Hoping to bottle around November 23. And then the waiting game for bottle conditioning begins... I'm glad my next brew is a straightforward ale. :mug:

Racked to the secondary on Sunday. This lagering business really tests your patience.

Interested in the Spiced Winter. I've read on this forum that you might want to cut back on the amount of the spice mixture you add. That's all dependent on how quickly you plan to drink the beer after bottling.
