Anybody have any experience with this since the new laws went into effect? Seems like there are two types of serving guidelines: one for 3 2oz samples and the other for 16oz.

I made an extract with steeped grains using Wyeast Bohemian Lager Strain
Primary for 2 weeks at 67 degrees.
Secondary for 3 weeks at 35 degrees
Bottled with 5oz corn sugar.
2 weeks......no carbonation????
So bring it down slowly(1-2 days) to around 36 and then rack to secondary & cold condition 3-4 weeks? Also I have a little head space from blow off right now. What can I do to reduce that when I rack to another 5 gallon carboy which should leave more head space than i have now due to trub...
