    Ye all ready for consuming. All bulk aged for 2-3 years before bottling. I gave away my oldest bottle a 2014 number for some apples to make cider.

    Just an update. This mead was tasting a little odd. So i chucked another 25g of challenger hops in then left it 6 more months to clear. It is a little odd now. Not terrible but not great. I think if i had chucked honey water and bread yeast together and left it 3 years it would have worked out...

    Thanks. I had not thought about the disolved oxygen. the only real reason to top off at the bottling stage is to make the most of my brewing bucket. i can leave space for the head during fermentation.

    Just a quick update on how this mead is clearing up. Might bottle soon but I'm a bit short on wine bottles so it might need to wait another year.

    Anyone done the 1868 Younger No. 3?

    I know it is an old post. I brewed the 1879 version yesterday. My og was 1.086 with 23l in the the fermenter so I don't know what went wrong there. I'll see how it goes but I don't think it will be 5.16% .

    Kiwi mead at 14 months. This might be its last racking. The citric acid burns from pealing 130 kiwis have healed now.

    Coconut, papaya and honeydew melon mead. Just racked from primary and fruit pressed. Seam to have left myself shot of liquid so I think ill top up with honey water.

    Any one had much luck with dumping honey and water on top of the dregs of a batch of beer? I have recently got back into beer after brewing exclusively mead and have decided to dump 8 kg of honey dissolved in 23l of water into the yeast and hops mess at the bottom of the bucket. I might add...
