Just curious if using both flaked wheat (4.4%) and cara-pils (5.2%)is too much in a recipe? I definitely get a lot of head. Or is it too much priming sugar? Here's my recipe:
7 lbs 2 row malt
1 lb Falked Corn
1lb honey malt
8oz biscuit malt
8oz Cara-pils
8oz Flaked Wheat...
After in primary for 8 days then in secondary for another 7 days, then bottled with 5 oz corn sugar -- shouldn't beer be fully carbinated after two weeks?
there's a nice release of gas when cap is pried off, but beer seems slightly flat. It tastes great, but lacks bubbles.

I thought an ice cider should begin at a gravity of 1.13 or more before fermentation.
Also, fermentation may have to be stopped to achieve the sweetness desired. Campden tablets and potassium sorbate and cold crashing, raking into secondary et cetera.

Will this yeast work to make Ice Ceider (1 gallon concentrated from 4 gallons)? How much of a packet should I use?
If so, how do I stop fermentation once I reach desired gravity?
I have campden tablets and potassium sorbate.
Also, should I use any pectic enzyme for clarifying?
