I have an IPA that has been sitting in the primary for about 11 days. It appears that all activity has ceased. I pitched a German Ale Y pack and its been sitting happy at about 72 after a few days of yeast fiesta. BUT, the temp in my brew rose up to about 80 for about a day at...
thanks for the input everybody. So, you're saying the final gravity is too high? like too much residual sugar and not enough fermentation? or the yeast might give off some sweeter flavors at that high a mash temp? (I just had to google 'attenuation', sheesh)
