Really you can put the probe any where in the system that will be consistent. So pretty much any where but in the mash, as your grain bill will change. Just take good notes. If your probe says *158 and your mash is *154 then you know to set your controller 4 degrees higher.

I love english beers, and west coast beers so this sounds like a great idea. for the grain bill keep it simple. Say 95% MO 5% 30-37 a single bittering addition of a nice clean hop to about 45 B.U.s. As for flavor, aroma, and dry that kinda depends on what you got.
I seconed the 1968. Have made many fine London Pride clones with that yeast. I have found that isinglass works very well with it. For me better than gelation.
