Nottingham + Mint Tea + Apple Juice = Buzz Cider!

Usually, there is enough residual yeast to carbonate without pitching more. As BrewFrick said, you have to add an easily edible sugar to get it started again, but I haven't had trouble getting it to carbonate without pitching a second yeast.

    Acid blends as preservatives

I've made a few batches of cider, using several recipes. So far, the first month out of the bottle is tasty (or at least not gross), but as it ages it takes on a rotten after taste. I was told to check the bottles and make sure they are sealing, and try adding a small amount of acid blend as a...

    An accidental experiment

They weren't open when I started the cider and it is now fermenting nicely. I'll see how it tastes in a week or so. If it is totally disgusting then, I'll remember to pay more attention to my booze and throw out that batch.

first batch apfelwein not going well

Lower temps do make for a slower yeast activity. You might try waiting more, or you could try re-pitching and increasing the temp around the primary. I had a mead that did something similar but after a week of leaving it be, I tasted it and it was fermenting. It just hadn't had any of the...

    woodchuck cider

I've been having the same problem of the flavor getting pulled out. I'm trying to make a sweeter and more apply cider, but there doesn't seem too be too many people working on the apple part of that, besides using fresh juice. Has anyone tried Leener's apple enhancer? Or even know what it is?

    An accidental experiment

I meant to start this batch last weekend, so I took the concentrate out of the freezer to thaw. I ran out of time and didn't remember to put it back in. I'm going to make the batch anyway because why not, but has anyone accidentally or on purpose started the fermentation in the concentrate...

    Man, I love Apfelwein

Does it matter if it is dextrose or sucrose?

    Aging tastes off

I primed them with the cordial standard sugar syrup. 2 parts water to 1 part sugar and heated until it thickens slightly. I sanitized the bottles by running them through the dishwater sans soap.

    Intro to mead

It is possible to turn out a decent mead on the first try. My first batch has been deemed "acceptable" to "good" by people who like mead and disgustingly sweet by people who don't like mead. Which is the problem with mead, it is a sweat drink and tastes like honey, so if that is a flavor...

    Aging tastes off

I bottled my first batch of cider in mid-August. It improved greatly with about a month in the bottle, but by the end of 6 weeks had started to taste off. I used the re-sealable ale bottles with the plastic stoppers that clamp shut to bottles it and kept it in my basement while it aged so it...
