I'm interested in growing hops here in the DFW area. Given that we are a little south of the optimum growing area and that our summers can be quite hot, does anyone have any suggestions re: what hops might do well here -- and which ones to avoid. I brew mainly ales.

Newbie question. It looks like I underfilled the carboy by maybe a half gallon. Is it OK to top off the wort? If so, when? Fermentation is just about done. I was thinking about adding the water when I bottle. Any thoughts?

I'm a new brewer -- 2nd batch. The first -- a Porter -- came out great with the help of friends. Right now I've got both a Porter and Irish Red in the works. First solo attempt. By the way, my wife drank most of the Porter.
