OK - so i've made mead before but i'm thinking of using linden honey for mead. Has anyone used this type before?
Are the nutrient additions the same [given I will make 3 gallons]?

I have been thinking of brewing with rice and was curious as to your thoughts on it.
Here is what I have so far:
4 LBS Light DME or Pilsen DME [leaning towards pilsen DME]
2 Lbs Rice Malt Extract [Dry]
4ozs Blackprinze Malt [for darker color]...

This is my first real attempt at a hard cider and I would like to get your thoughts on it.

I am currently doing a saison using the Wyeast 3711 [french saison] and was curious about brew temps.
I currently have mine at 68F for the first 2 days and just raised the temp to 71F.
Would 71F be good for a saison or would i need a higher temp? [i do not want...

since my local brew store is knda short on the French Strisslespalt hops i was thinking of subbing for Crystal.
and I may use liquid plisner insted of the dry malt to lower the OG a bit to 1.057 and get a tad more bitterness out of my hops without having to buy a second...
Brewtah: I am not currently making this brew but i was think of fermenting at room tempature of 76F - 78 F. I know saison likes warmer temps so the is good news for my IPA that needs to be a bit cooler in a limitied space fridge.
Since it is the holiday season i have decided to do a spiced Saison.
Having never done a saison I have a recipe in mind.
Extract Batch:
Grain[s]/ Malts[s]
5 Lbs Pilsner Dry Extract
1.6 Lbs Wheat Dry Extract

I have done several meads before as my user name implies but i will try a 3 gallon sack sweet mead.
Should I use the white labs sweet mead yeast or
should i use something like R-2 or Qa23 yeast ?
I was thinking around 10.5 lbs [enough honey?] honey for a sack sweet 3 gallon batch.
saramc: Yes my hydrometer is calibrated; but I did use star-san to sanitize it and then put in into the bucket directly. Maybe that is why I have the reading I have.
Then again I think my gravity should be lower if CO2 is pushing up on the hydrometer bulb.
