    I sprinkled the yeast at 66, first day was at 66-68, the next day was 74-76. Then dropped from then on over 3 days down to 64 degrees.

    Can I skip the secondary fermentation?

    Fantastic advice. This is what I highly recommend. Take that anxiety for a beer and put in into making your next batch. The next thing you know...your beer will be ready to consume.

    secondary question for a wit

    My beautiful orange Wit was tranferred to the secondary yesterday. Now the orange color is on the bottom half of the secondary and a redish-orange (kinda clear) fluid is on the top half. Not sure where this 2 week process is going, but I am along for the ride.
