    I should also suggest you pick up a few extra packs of dry yeast for backup/emergency. I made a mistake on my second brew and added the yeast to boiling water to try to rehydrate. Of course this killed the yeast and I had no backup. Now Ill always have a pack or two in the fridge.

    One other thing... The Weekend Brewers instructions said to pour the priming mixture on top of the beer before bottling. Instead pour that in your bottling bucket first and then siphon beer into that to mix without aerating. Read John Palmer's How To Brew. Free online, but only 10 bucks on...

    2nd brew, 1st mistake - rehydrating yeast

    Thanks for all of the feedback. I'll use the Muntons, but should I rehydrated or just sprinkle it in? I'm worried about opening the lid and risking infection. Will the original yeast that was killed by the boiling water just settle out? Will it produce any off flavors? I was going to leave...

    Thanks for the reply. It's an Ale kit with ale yeast. I let the yeast and wort cool to about 80 before I pitched. I am worried though that I killed the yeast because I rehydrated it in boiled water before I let that cool.

    In the middle of brewing a True Brew Oktoberfest kit. It contains 2 1 oz. Packets of Liberty Hops. Directions don't say when to add second packet. Should they both go in for 60 minutes, or should I hold off on 2nd packet.
