    Proper dry yeast pitching?

Bullinachinashop, thanks so much for posting that. Very informative, has the tone of a scientist too (I work in research too, though not in this field). For the rest of you, an amusing word throwing match...

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Glad it's getting better gtibrews2, if it keeps changing it'll keep you interested! Just sampled mine. It's been fermenting for only a week and is down to 1.030. Happy about that, I've had several that have finished high. Tastes remarkably good for such a young strong beer. I have high hopes...

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Thanks for the reply. This is actually not my first big beer, but I've had the same problem with all of them... efficiency around or below 60%. If you're able to hit such high numbers then there must be something I'm doing wrong. I'm just not sure what! What sort of water/grain ratio do you...

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Brewed just finished brewing this, I'm excited! I've brewed a few big beers recently, around OG=1.090s, and keep getting what I would consider low brew house efficiency. I'm told that 72% is a good target, but I'm down at 60%. Is that normal for a beer this size? I mashed for 2 hours, and...

American Amber Ale Caramel Amber Ale

Yes, the sucrose needs to be added to the beer after fermentation has completed. You can add it to each bottle individually, however that's very tedious and it can be difficult to measure out - getting this wrong is a good way to end up with exploding bottles. If you have the equipment...

American Amber Ale Caramel Amber Ale

OG figures typically include everything, candi sugar/syrup, sugars, grains... anything that constitutes carbohydrates. By the way, it's worth checking the figures posted here in a brewing software calculator, and if you find problems ask here. Mine didn't add up, so I made an (incorrect)...

Belgian Golden Strong Ale Pink Elephant (Delirium Tremens clone)

I brewed this, and somehow ended up with a FG of 1.000. Measured it several times! Very fermentable wort. It tastes fantastic however. Had one yesterday, and I strongly recommend this beer. Mine was a bit sharp at first, but after 3 months it's tasting great.

Saison How Rye I Am (Rye Saison) - 2011 - 1st Place Best of Show - HBT Comp

Hey Chaps, Today I bottled this. Brewing it was a challenge, I couldn't get rice hulls. 40% rye in the bill lead to loads of gelatinous gunk in the wort. A very stuck sparge. Lead to over an inch of trub in the fermenter. I brewed it with Belle Saison (dried saison yeast). I've never smelled...

American Amber Ale Caramel Amber Ale

Hey all. I brewed this a month ago I think, and have tried a few. Mine has come out too hoppy for my taste. This is something that I hope will subdue in time. How long are you guys waiting to drink this, or did I manage to overhop somehow? The recipe quotes batch size of 5.5 gallons. Is that...

Historical Beer: Kentucky Common "Kiss Yer Cousin" Rye Kentucky Common Ale

My attempt at this has now carbonated. I found some suspicious looking white floating matter in the fermenter before racking to bottle. I tried to leave that behind, but I feared an infection. Taste has been interesting. It's definitely not sour, so if it is infected I can't detect it right...

"Darker than the lowest bowels of hell" - Aussie Barleywine Help

I did indeed, though whether they'll tell my anything is another question. I hope so, I hear good things about them. Love the slogan by the way, 100% Homer :)

"Darker than the lowest bowels of hell" - Aussie Barleywine Help

Hi All, Here in Australia we have a craft brewery called HopDog Beerworks. They make the SuperBeast2015, this year's celebration of their continued existence. This beer is fantastic, I'd love to make it, and I'm asking for your expert community's help in assessing what i have come up with...

What do you do at your job?

Research fellow at an Australian university. I find ways of using computing to investigate biological systems. Mainly, I create simulations of things like the bacteria in the gut and how they respond to changing diets, and hence how your health is affected. I also use machine learning to predict...

Historical Beer: Kentucky Common "Kiss Yer Cousin" Rye Kentucky Common Ale

Hi Chaps. Planning to brew this tomorrow. LHBS doesn't stock flaked maize. They suggested using instant polenta - I wasted an hour in two different massive supermarkets and couldn't find instant polenta anywhere. Maize is corn. So could I use corn flour in my mash? I can recirculate wort...
