    I have the Bayou Classic SP10. The thing is a beast! The SP50 is the same burner if you prefer the tall legs instead of the short profile.

    I would consider a 10g brew pot. I had an 8g when I jumped to all grain and I ended up having to lower the starting volume and add 1g top off water to the fermenter due to the boil off of the banjo burner. I got a 10g prior to my last brew day and life is good doing full wort boils now.

    That's very close to a Newcastle clone recipe I have. Keep the Black Patent malt to 1 oz. and you should be good.

    Agreed. Reading your post, you've been at 1.012 for 10 days. General consensus is 3 days straight and fermentation is over and you are safe to bottle.

    I use a number system. My first was a Newcastle clone so... 1-Newcastle clone, etc. I got a sharpie and wrote a "1" on the bottle caps after bottling. A quick look in the storage spot and I knew what I had. I've moved on to kegging, but I keep the numbers for batches for keeping straight in...
