    I'm emptying my oak barrel after 8 months of aging and have no brew to refill with. My plan is to rinse, sanitize and refill with water and fresh hops. my question is will the hops help keep bacteria from growing in the barrel, or will this be another problem later on?:mug:

    yeah just trying to dial these recipes in before this weekend, When i'll also be brewing A German bock, with same base malt with German Specialty malts, should be interesting fermenting these side by side. Fermenting at that temp is about what I had in mind so i'll try and keep it around...

    silly mistake...WAY too much crystal.

    Just made the some mistake. End of the year brew, and ended up mixing left over grain. and used 1.5lb crystal 15l. to a 13lb. grain bill. Currently in primary, fermenting away. Is there any way to balance this beer out, or is it to late?
