    DME has to be the stickiest sh*t I've ever seen

    yeah, i found that spilling it all over the kitchen isn,t a good thing to do. Sprinkle it on your cornflakes at breakfast time.

    When to experiment with flavours?

    There are flavours in extract form. My fave with wheat is a couple pounds of honey in the boil and a 4oz. bottle of ID Carlson raspberry extract at bottling time. Yummy.

    5 Gallon Carboy

    You won't have to worry about volume loss. Bigger just gives you more head room. I use a couple 5's and have no problems.

    Honey beer

    Instead of sugar? Add it during your boil. you can substitute 3.3lbs of extract for 3 lbs of honey in an extract 5 gallon recipe if you like. I will just add about 2 lbs of honey to a 6.6 lb extract recipe. I add later in the boil, about 20 minutes to go.It is a fermentable no doubt.

    Grain Bags

    I use the muslin kind. Try to keep "floaters" outa my finished product. Go with what works for you, regardless of what others say.

    Rookie Mistake.....

    My buddy just had new carpet put in his basement. He was moving a carboy of dark ale when it slipped and hit something and broke all over the new carpet. Needless to say he had to replace the carpet. That was about the end of brewing over there. Everyone is capable of a bonehead move. I'm sure...
