    Pitch temp for ales?

    What temp do you pitch an ale at? I've read conflicting views. One view states 75* to get a quick start then drop to desired temp. Another view says you'll get a much crisper/cleaner beer pitching at 65*. What are your thoughts/experiences?

    Candi sugar or table sugar?

    Jul 12th, 2009 4:53 pm Is table sugar a good replacement for candi sugar? Is there some kind of conversion if replacing it? My recipe calls for 8 oz clear candi sugar, should I just use 8 oz table sugar. Is beet sugar or some other kind of sugar better than the table sugar?
