Too much cold break in my carboys.

don't worry its fine the yeast will eat it all up and it will get mixed up. chill haze can be prevented with a good cold rest. as for flavors you should be fine. i knock with a plate chiller and i like to see a good amount of chill haze.

    New brewer, first batch! Question.....

yeah using a kit that has pellets and some specialty malt can yield better results. the more quality your ingredient the better your beer will taste. you also have to account for sanitary conditions and patients. but hey congrats on your first beer.

Do Most Microbreweries Use Jacketed Fermenters?

yeah jacket is the way to go. the brewery i work at we can keep fermentation temp under control then when they are done we can cold crash them to drop out more yeast. then transfer to conditioning tanks or filter them out of the same vessal.

    Last Second Advice

are you putting the hops in a nylon bag? i find the bag help from getting more hops in the primary. also how are you chilling? if you are useing an immersion chiller the cold break is ok just try to leave any burnt stuff in the pot. relax and have fun
