They are a very good company. I've had the Pliny kit and the Double Barrel Ale kit and they were both outstanding.
Although, I got the free shipping and they were the slowest to ship of any beer store I have ordered from. It was over 2 weeks.

Everyone around here is dusty from grain milling. They clean all the time and do major shelving moves weekly to keep up on it. It's just a result of having the mill in the main room. You would think they would have an enclosed area with exhaust but I haven't seen one set up like that, yet...
I agree with the 1/2 lb Crystal. You should consider dry hopping with Citra/Simcoe.
I would double the FWH hops to 2 oz. and start with Centennial. Then I would use your times but make the last 10 then 5 Simcoe only. I would use 2 oz. of a Simcoe/Citra blend in dry.

And an even bigger mediocre brewery is created. Of those Foothills is surely the best but they are pretty meh IMO. Best thing about foothills are their labels. Lots of better beer in the state from Pisgah, Mother Earth, Duck Rabbit, etc.
