    Moldy film on top of ferment

    Without pictures it's hard to be 100% certain, but it sounds like a normal fermentation. If you have an off white foam with a thin layer of brown "crud" on top of that then no worries, it's just yeast and is totally normal. And remember, if it tastes good it is good.

    Crystal Malt Substitutions 80L vs 90L

    I run into this same problem almost every brew. It's not a big deal. Sure, a 10L difference will theoretically make for a darker beer but I doubt anybody would ever be able to tell. Just get what's closest and go ahead as planned, your beer will be just fine.

    Try putting a rubber or perhahps a nylon washer on the inside between the cooler and your bulkhead. Wrench it down tight and you should be good to go.

    What is a good style of beer to bourbon oak?

    I recently had a chance to try a version of Widmers, Brrrr aged in bourbon barrels. Not too sure what style this beer falls into, but it lent itself to the bourbon flavor very well. Don't know if you guys get Widmer down there in Texas but it would definetly be worth checking out IMO.
