    Scottish Fruit Cake Wee Heavy?

I don't post much here, so forgive me if I have this in the wrong section! I am partaking in a fruit beer competition in mid January 2016 and I am considering the following recipe for a Scottish Fruit Cake Wee Heavy. I am using Northern Brewer's base all-grain recipe (with a minor alteration)...

My first time straying from the recipe...opinions.

I decided upon the Asbach Ural because it is aged in oak barrels, so I believe that it would compliment. When I was stationed in Germany in the 90s, my local pilstube served an Asbach Doppelbock which was quite tasty, and is sorta what I am shooting for. It was basically a Doppelbock...

My first time straying from the recipe...opinions.

I have just tapped my third brew, an AHB Bavarian Hefeweizen...excellent! This hobby has bitten me hard! I currently have a Black Ale fermenting, and will soon start on a NB Petite Saison d'Ete and Patersbier...can't wait!! After 6 batches made from sticking to the recipe, I figure it is...

    Too early to secondary?

My worry is that I may need to toss the batch. Being my second batch (and perhaps a bit impatient) it seems that I have screwed this up. I guess I will just sit on it for a few weeks and see what happens.

    Too early to secondary?

So if I am understanding this correctly, I could pitch an ale yeast into the carboy and continue fermenting at room temp? If I do this, could/should I maybe add some additional sugar/honey or just leave it be? This is becoming an adventure!

    Too early to secondary?

Fair enough. I understand the reasoning behind AHS not posting instructions on their site, but had I known that bocks required cold fermentation I would have chosen another kit. That said, what will the warmer temperature do to the beer...will it still turn out? I could move my carboy to my...

    Too early to secondary?

I just discovered the "Multiple Questions About Secondary Fermentation" thread, and I am about midway through it. Enlightening. So far I am just following the instructions on the kits and they always seem to mention secondary fermentation...but the lightbulb has now gone on. Was I correct...

    Too early to secondary?

Hi all! Noob here, call me Cliff. First batch (AHS Belgian Wit) went great and is already gone. Burp! Second batch is an AHS Texas Bock extract and I have a few questions. When I read the instructions, they stated that the fermentation should take place under cold temperatures, but there...

    Beer Can Collection

That is Duke Beer. That was brewed either by Duquesne Brewing or C. Schmidt & Sons Brewing. I believe it was discontinued in the early 70s, but I seem to recall hearing that it was being revived. There is a wealth of information on Michigan breweries available at this site...

    Beer Can Collection

I have an extensive collection (10,000+ items) and have most of these. You may find that the Encore can is also a Schlitz product. I would say that, from what I can tell from the picture, your most valuable cans are probably the Oertel's Real Draft, Pike's Peak, Sterling Draft, and the Fehr's...

First post, first batch, and a silly question

Greetings all, my name is Cliff and I am brand new here. Howdy! After years of being a beer collector, I finally decided to take the leap and buy a home brewing/kegging kit and recently finished my first batch: an AHS Belgian Wit extract kit. I must say that I was very pleased with the...
