    I biab, and can only mash about 12 pounds of grain without overflow. If i just replaced about 5 pounds of the belgian pale malt with some DME---would that work out okay?

    I am looking for a clone recipe for "Old New Orleans Gingeroo."

    I would brew something like this https://www.homebrewtalk.com/f171/easy-ginger-ale-208888/ and mix it with rum...I haven't had it, but it seems pretty clear that the alcohol is from rum and not fermented ginger beer.

    See the text at the very top. 60 minute boil---a bunch of people have posted in this thread wondering about DMS with a 60 rather than 90 minute boil, but I had no hints of DMS with mine, and most people seem to be doing the 60 minute boil as written.
