    Bourbon Barrel Cider

    This recipe sounds really good. Also, I'm not a big fireball whiskey fan, but if you guys haven't tried it already, add a shot to your next glass of cider you drink. "It tastes like Reniassance Festival". Adds a nice spiced flavor and compliments hard cider very well.

    Average clearing times

    In my experience most wines will be clear at the 3-4 month mark. I like to let my wines bulk age in the carboy for around 5 months or more before bottling and they are normally crystal clear by then.

    yeast

    I just tasted my finished batch of hard cider with nottingham ale yeast. VERY happy with the result. Plus, it was crystal clear in about 5 weeks. Great flocculation with this yeast for me.

    help! My cider keeps getting infected.

    Easy clean i just a sanitizer, not a cleaner. Try out some PBW cleaner. Soak it, rinse it, then sanitize it. How long are you letting it sit in the primary before racking to secondary or bottling? Are you topping up with anything?

    So this past weekend, I racked my 5 gal batch of cider into my keg on top of poorly crushed campden tablets and potassium sorbate, in order to backsweeten it before I hook it up to CO2. I'm not sure why but I decided it would be fine to poorly crush the tablets and toss it in the keg...
