I just made this using the Speed Brewing recipe and adding some Sorachi Ace hops for a citrus flavor. Turned out really good. Very light but full of flavor.
Brewed this recipe just recently. Used Saflager W 34/70 yeast. Fermented it my garage which was around 56-58 degrees for three weeks before bottling. Turned out delicious.
Here is a picture of my Edelweiss - this one opened about six weeks after bottling. Carbonation is just right and flavors are well balanced. I will definitely be making this one again.

Thanks for the reply and the tips. I did let it sit for three weeks in the fermenter instead of two. The sulfur smell was gone, and I tasted some while bottling and got no off flavors. Fingers crossed that it will turn out delicious.

Hi - I'm making a one gallon batch of Honey Sage Seasonal from the BBS recipe book, using Safbrew T-58 yeast. It smelled fantastic going into the fermenter, but then started giving off a strong sulfur smell. Recipe says to bottle after two weeks, but I'm hesitant to bottle while it still smells...
