    was your lambic worth it?

it's gone through a bunch of changes, but it started life as a lacto culture and commercial pedio to sour a blonde belgian i made before the lambic - that beer got fermented with brett-c and sacc - i saved that yeast. that hot mess went into the lamibc, which had other yeasts added to it (i did...

    was your lambic worth it?

i do a bunch of sours and they're all worth it, except for the lambic - the lambic was standard mash (pretty newbie at sours at that point so no turbid) and was knocked up with lacto, brett-b, brett-c, sac and pedio... (a home yeast that has turned out some pretty fun and funky sours) was...

    was your lambic worth it?

i'm not sure mine was... brewed mine on 1/23/11 and just bottled half of it yesterday, almost two years to the day. it is off the chart sour (too sour), not as dry as i thought it would be but it has a little acetic quality to it which i'm not a huge fan of... i dropped the other half on...

    12 Beers of Christmas 2012!

spiced imperial stout; aroma: heavy spice and you can smell huge quantities of star anise and warm alcohol... i sipped this bad boy watching a movie late at night with the kids and the aroma said "take your time" appearance: poured very aggressively and in the dim light of the kitchen but it...

    12 Beers of Christmas 2012!

last few days i had a couple different ones; strong saffron saison; aroma: smells like blossoming farmland - sweet and spicy with some earthiness appearance: slightly hazy straw with orange tints - i didn't really let this sit in the fridge very long (just a few days) but i imagine it would...

    12 Beers of Christmas 2012!

just as an update i'll double check, but it looks like i received everything - good work people... last one i had was the gruit; aroma: piney, but not hoppy piney - like pine piney, smells warm. appearance: slightly hazy dark amber... i poured it aggressively and the head built up to about...

    12 Beers of Christmas 2012!

the quad i had was perfectly carb'd and fan-freaking-tastic, thank you! had the juniper rye bock yesterday - not really sure what to say... i'm always impressed by beers from homebrewers that surpass commercial varieties. fantastic aroma, balance, clarity and taste - absolutely loved it. the...

    2013 Homebrewing Resolutions

    - brew more. - deplete my hop stockpile - use my homegrown hops - find local malt and make a 100% local beer - use my house yeast twice. - use my wild (now domesticated) yeast twice. - make an IPA out of my wild yeast. - replenish the sour patch - bottle my lambic (been two years) - bottle my...

    12 Beers of Christmas 2012!

i was hoping to get over 70% efficiency but it just didn't happen :( still a tad over style in terms of ABV at 5.2% - i'll actually make this beer again anytime of year - doesn't really scream christmas but if you let it chill for a couple of weeks, all the haze goes away and it gets even...

    12 Beers of Christmas 2012!

i'll be saving one of each as well... thanks for the review dgez... not very christmas-y for sure, but the recipe didn't seem to be... i increased the abv and body a bit and tried to make it a bit darker than the original recipe intended.

Why a "head" in your glass?

agree... site, smell, taste, feel - maybe not so much sound. it's a sensory thing. and obviously who doesn't like head? (apologies to the ladies in the crowd)
