    Raspberries go well with other berries and citrus... Maybe mango? If you started with fresh fruit, I would continue down that path... It's easier and you know it will have great flavor!

    Thanks yooper! We have racked and it's a lot more active looking in the bottle than it was in the bucket, but I assume that's a bit mis leading as the bucket didn't come to a narrow mouth and it wasn't see through. Should I be worried about light exposure or any thing?

    I actually have a recipe for a wine type fermentation of coffee. I am thinking about trying it- it sounds like few here have done it, so maybe I will start after I rack my plum wine...

    I am making plum wine from fruit and honey and followed the recipe to the letter. I am at 10 days of fermentation with the fruit still in the bucket and a SG of 1.020 on my way to 1.000 according to the book I am following.     California home brewers get 100gal of beer and wine for a single person at an address and 200 of beer and wine per multiple people at the one dwelling. I personally would love to get to the 400 gallon mark. But I haven't the space to do 20 concurrently.

    My first attempt at fermenting anything...

    Awww yes, bitten by the bug. I had a friend with an overburdened plum tree and 11 pounds of honey from his hive... I have a batch going now and I am already trying to figure out the next fermentation while my wine is resting for a few months.

    I have been thinking a lot about this and I think there would be a market for work space rental and storage. See in California the place in Sac only can allow you to brew their beer and you have to buy it from them- but in California, whether or not they are adding the yeast or not, it isn't...
