    Not enough yeast....

Hi, I've just started off my second brew. I'm using 8kg of orange blossom to make 18L in total. However, I've just filled the fermenter and realised I only have 5g of yeast, I reckon I need at least 8g. it will be around 24 hours until I can get any more, should I add the 5g and top it up later...

    How Popular is Mead?

Ye, thanks that's interesting. I didn't make that very clear. I meant nearly everyone has heard of it but I was surprised at how few people knew exactly what is was other than old and alcoholic.

How necessary are nutrients? They weren't listed in any of the recipes I looked at. Can I add them at a...

    Mead without an airlock?

Hi, thanks for getting back to me. I used 2.4kg of heather honey with litres of water and champagne yeast. I've got very basic equipment so I was planning on leaving it in the bucket (covered but not completely sealed - thanks everyone) for around a month before siphoning it into bottles. Hoping...

    Mead without an airlock?

Hi everyone, I started my first batch of Meade yesterday, I have left it in a plastic bucket with a sealed lid but no airlock. Do I need to release the CO2 if so how often and does it matter if oxygen gets into the mixture? Many thanks, Josh
