    How many spoons to weigh down hops?

    I recommend using a scale to measure your quantities. Since a small different in hops weight could make a big difference in the final taste of your beer.

    US-05 is one of the most neutral yeasts out there. Therefore, I don't think the flavor is coming from the yeast.

    Should be, alcool level of your beer + the low pH of a beer generaly isn't a suitable environnement for most bacterias and molds

    And don't forget to convert your units using a tool like www.brewersfriend.com As you may know, the sugars are more soluble in solution when it is hotter so, your gravity will be changing as the temperature does. But yeah, use the one right before pitching.
