    Mexican cervesa

    Cervesa, is the spanish word for beer. Typically, Mexican cervesa is a pale lager. Pale lagers are usually very lightly hopped (with some exceptions) and use little or no finishing hops. Make the kit once as it is written. If you want to tweak the recipe and add some finishing hops, do it next time.

    light or dark brown sugar for priming?

    All I ever use is white table sugar. It works just fine. Use a little less of it than you would corn sugar. Look at tastybrew.com for a priming sugar calculator. Incidentally, table sugar leaves no aftertaste that I can detect.

    reyeasting for bottle conditioning

    I use 1/2 pkt of rehydrated dry yeast per 5 gallons. Any strain/type of beer yeast will do. All you're doing is fermenting the priming sugar.

    I would suspect too a high primary fermentation temp. This is a common cause of "off flavors" in beer.
