hey just stumbled across this site and felt i should join probably wont be on here too much but one never knows.
started brewing beers in the early 80's taught the ropes by a friend who had been a brew meister (spelling?) in munich and branched into mead after my first year.
just ramping up...
I do not use them in my brewing I "simply" make certain everything is sanitary
I popped open a bottle of mead I made close to thirty years ago recently and all i can say is it was astoundingly good. :mug:
so can you age more than a year or two without sulfites. yes
