    I'm going to try my hand at a Brut IPA. Never done one before but it looks interesting . Only late additions of hops and a special enzyme added when pitching the yeast.

    Our friendly neighborhood HBS is now carrying Carolina Malt House Malts, so I picked up some Carolina Gold 2-row and some Crystal 10L for Gold Pale Ale. Hops will be EKG & Fuggles.

    I just finished a one-gallon batch of sparkling apple cider dry hopped with Brewer's Gold nuggets. Kept it in 2ndary about a week. It turned out nice. I'd do it again.

    Anyone have experience/success bottle conditioning Mead for carbonation?

    Don't tell anyone, but I like those bottles better than the ones I bought at my friendly neighborhood HBS . Yesah the lemonade is good but some of the other flavors, pumpkin spice comes to mind, is better dumping down the drain and keeping the bottle.

    I'm new to mead but have been making sparkling hard cider for some time now. I bottle condition my cider to get a nice champagne-like carbonation. Can I use the same method for mead?

    Dadof5, I don't see why the yeast cake from your cider wouldn't work, provided it's still viable. I think I'd mix it with a little water and nutrient to see if it activates before I tried it in my mix.

    I've been making sparkling hard cider from store-bought juice for some time now. Aldi has an organic Apple Juice for about 2 bucks a 1/2 gallon.
