    First Recipe

I received the ingredients for this recipe, and I guess AHBS sent me an extra 2 pounds of DME accidentally. Well, I didn't look at my recipe again, and thought 8 was correct and added it all. Is this going to do anything bad to my beer?

Pitched yeast when wort was too warm

Revvy, I'm pretty new to this, so my assumption was that some of the yeast wasn't doing it's job, and that it must have been because I put it into something that was too warm. I assumed incorrectly obviously, so that part is good news. As far as temp drop, it has, but only 2 degrees. I did...

Pitched yeast when wort was too warm

I made Holiday Ale 3 weeks ago from an extract kit from Midwest. When I finished, I put the pot in my sink as usual to cool down. Apparently, I didn't have enough ice or didn't wait long enough for it to cool down, because I wasn't getting a reading on my thermometer when I moved it to the...

    "Harsh" taste after carbonation

Sorry, I'm a newb, I'm not sure what you mean by hot and cold break. I did not strain the wort though.

    "Harsh" taste after carbonation

I did download Beersmith and am checking it out right now. Neat software, it is going to take me a little bit to get all of the information into it. Any information on how I know what I want to use as a target volume for co2? I was worried about leaving it on the cake so long, I tried...

    "Harsh" taste after carbonation

Wow, looks like I was using way too much...sorry if this is obvious and I am missing it, but how do I know what volume of co2 I would want to achieve?

    "Harsh" taste after carbonation

The carbonation seems to be normal, but I have been pouring carefully. My first two batches, I used 5 oz., and I realized that possibly was too much, so I reduced to 3/4 cup which was around 4 oz. What kind of guidelines do you use to judge the amount of sugar that should be used?
