    Lotta times that is a european 29mm bottle cap instead of a 25mm 'Murikan cap. You would need a different size bell for your capper and the larger caps too.

    Cinnamon does have a component that acts like starch or gelatin holding baked goods together. That is probably what you are seeing. IDK if there is an easy way to get rid of it.

    Took the sample for a gravity reading yesterday, dumped it into a glass, added some sugar. Tasted pretty good for 10 days old, even SWMBO thought it wouldn't be bad after a while in a bottle.

    Tried this with bottled white grape juice instead of concentrate. The fermentation looks like it stopped after a week. Now its not doing anything. At all. Trying to decide to give it a little sugar water or something, or just to wait.

    Dangit, ya beat me to it! Also, those brewers who have used cinnamon sticks when brewing and bottling, do you do anything to sterilize the sticks before chucking them in the mix?

    I think just plain juice is more likely to reach 5ish percent. A little more than the 3.2% she is shooting for. Also my airlock was going strong for a few days and just kinda stopped. I think my fermenter developed some kind of leak, 'cuz I could push on the top causing the airlock to bubble...
